Luckily this week doesn’t look at busy.  We could all use a little down time, right? My husband is forgoing his night volunteering on the ambulance corp to celebrate my birthday on Tuesday, and so far, our only after school activity this week besides playing outside in the beautiful weather is swim class. Besides our weekly “breakfast for dinner” being switched to Monday, all in all, it looks like a fabulous (and organized) week ahead!  I have even added two new recipes to my weekly line up – Chicken Cordon Bleu Casserole, and a Honey Garlic Shrimp Skillet.  I can’t wait to try them.


German Oven Pancakes

One of my favorite recipes for this is from Girl Inspired.  Her families recipe for German Oven Pancakes is insanely good (and perfect for actual breakfast, too).


Grilled Flank Steak

Today is my birthday, and I want steak.  I want it with sautéed butter mushrooms, and a baked potato.  My marinade for the steak is super easy!  Open a freezer bag and fill it with 1/2 cup soy sauce, 3 shakes of fish sauce, a tablespoon of garlic powder, a tablespoon of black pepper, and a teaspoon of red pepper flakes.  Let it marinate for about 2 hours, bring it to room temp, and place it on a hot grill.  Grill for 5 minutes a side, let it rest for another 5 and dig in!

Chicken Cordon Bleu Casserole

I don’t make casseroles that often, but this just looks too darn good not to try.  Also, my husband loves the frozen, packaged version of cordon bleu, so I knew I had to add a new recipe that got rid of all of the “extra” ingredients we are looking to ban from our house.  Hopefully, it’s a hit!  I’ll let you know!

Slow Cooker Zupa Toscana

We have swim class right at 5:00 tonight, and he is very hungry by the time we get home.  I love to do slow cooker meals on the days that we aren’t home at dinner time so we aren’t tempted to get “to-go” food too often, and so it’s ready when we walk in the door.  Luckily, my little guy loves soup!

Honey Garlic Shrimp Skillet

I need to cook seafood more often, and this recipe is so easy that it’s hard not to use it in the menu plan for the week.  Both my husband and son adore shrimp, so I’m sure that they’ll love this new addition to our recipe box! (I’ll let you know how it goes)!
