Easiest Pot Roast Ever – Joyfully Mom

Pot Roast is one of my favorite meals, and it couldn’t be easier to make.  Unfortunately, my husband doesn’t enjoy pot roast.  I have NO idea what’s wrong with him.  At any rate, I usually have to wait until we have company to make it, and luckily we had some of our best friends over this past weekend, and they actually requested my post roast!

I love the slow cooker.  Seriously.  I think it’s the perfect cooking tool.  You literally throw everything in in the morning, the house smells fantastic all day, and by dinner time, you look like a hero having a fantastic meal on the table.  Some of my favorites are pulled pork, Sunday gravy, corned beef, and pot roast tops the list.


Easiest Pot Roast Ever - By Joyfully Mom

Prep Time: 15 minutes

Cook Time: 8 hours

Total Time: 8 hours, 15 minutes

Yield: 4-6 servings


  • 1 4 lb bottom round roast
  • 1 Large onion. Peeled and cut in half
  • 1 Large bay leaf
  • 4 Cans of button mushrooms
  • 1 Envelope of Onion Soup Mix
  • 2 Tbsp Olive Oil
  • 1/2 cup Flour
  • Salt, Pepper, & Garlic Powder to taste.


  • Pat the bottom round dry with paper towel.
  • Dredge the bottom round in the flour. A light covering will do.
  • Heat the oil in a large skillet.
  • Place the bottom round into the skillet and brown on all sides.
  • Place the bottom round into the slow cooker.
  • Add the onion - 1 piece on each side.
  • Add the mushrooms, including the juice of two to three of the cans. Juices should reach 1/3 of the way up the roast. Reserve the leftover juices in the event that you need them.
  • Add the bay leaf.
  • Pour the onion soup mix over the top of everything.
  • Cook the pot roast on low for 8 hours. It should be fork tender at the end.
  • If you like a thicker gravy, you can whisk in a can of cream of mushroom soup. We usually stick with the au jus.
